Serve with seasonal vegetables grilled on the BBQ, a little olive or camelina oil and a pinch of seaweed salt. Delish!
Corn with homemade fries and a good BBQ sauce will also do the trick
Preheat the oven to 400°F (205°C).
Put the root vegetables into a bowl. Add olive oil, balsamic vinegar, herbs, salt and pepper. Mix well.
Place the vegetables on a baking tray lined with a silicone sheet or parchment paper.
Put it in the oven and cook for 30 minutes, turning the vegetables several times. Serve hot.
